What's for dinner

This week is going to be so great because I really only have 4 days to cook!  But here's what I have planned
Monday: Memorial Day - Friend's BBQ (Don't you just love it when people invite you over?!). She fixed baked BBQ pork chops, green beans, beats, homemade mashed potatoes, sliced tomatoes and homemade ice cream. 
Tuesday: Grilled chicken with grilled veggies (squash, tomatoes, onion and mushrooms) over rice. Strawberries for dessert.
Wednesday: Spaghetti with Allen's green beans. More strawberries.
Thursday: Chicken stir-fry (made with zucchini, mushrooms, frozen veggies and canned bean sprouts and water chestnuts). Watermelon
Friday: Turkey burgers with baked beans and corn on the cob (don't you just LOVE summer food?!). More watermelon.
Saturday - Out of town

What's for dinner


Growing up, my mom taught me the value of sitting down and making a plan for dinners.  It helps with grocery shopping, we can consider balanced meals, we can have a variety of meals, and it's amazing how much time we save when we don't have to figure it out at last minute.
Here is this week's plan:

Monday: Ham slice, summer squash, homemade mashed potatoes and side salad.  Strawberries and whipped cream for dessert.
Tuesday: Rotisserie chicken (save 1/2 for tomorrow), corn on the cob, green beans and side salad.  Strawberries and whipped cream for dessert.
Wednesday: Southwest chicken soup and cornbread.  Watermelon for dessert.
Thursday: Slow cooker pulled pork sandwiches with French Fries and baked beans.  Dessert TBA
Friday: Leftovers
Saturday: Church cookout - bring a potluck dish.
Sunday: Taco Salad. Ice cream for dessert.

Turkey Stroganoff


If you know me, you know I'm not a fan of beef. So I tend to swap out lean ground turkey when a recipe calls for it. So, if you are a beef fan, you can swap it back.
Ingredients:
1 package of lean ground turkey
1/2 chopped onion
1/2 cup water
1 Tbsp. Worcestershire
1 (10 oz.) can mushroom soup
1 can low sodium beef broth (okay, I cheated here, but I did want the flavor to be right).
3 cups or a package of egg noodles
1/3 cup low fat sour cream
Directions:
In a large skillet, brown meat, add onions. 

Add soup, broth, Worcestershire, water. Once you got that all mixed up, add your noodles - yep, just as they are. 

Bring to a boil. Now, low stove top to medium, cover the skillet and cook for 10 minutes. 

You will want to uncover and stir, mixing the noodles in with the mixture more. 
Then, you will uncover and let the sauce thicken. 
I served mine with a salad and French bread. I also added a can of green beans (not pictured).
